You own sanitation across the entire facility. The kitchen and the storefront both depend on your work to stay food-safe. This is not a "fill in when needed" role — it's a full-time discipline. HACCP compliance fails when cleaning is everyone's job. We've made it one person's.
What you're actually doing
Dish pit. Equipment cleaning. Floor mopping. Bathroom sanitation. End-of-day deep clean. Restocking sanitation supplies. Logging completed cleaning tasks in FSMS so we have an audit trail when MINSA inspects.

This role is core to our food safety system. Without consistent sanitation, we cannot legally sell what we produce. We treat the Steward role with the dignity it deserves — full-time pay, full benefits, full team membership.
